Pyramide is an unpasteurised goats-milk cheese. Its shape is reminiscent of its cousin the Valencay made famous by Napoléon who famously cut its top off in rage. It has a soft and delicate taste with nutty flavor when young, it becomes sharper as it ages. It is incredibly good, especially when enjoyed with cherry jam!
